I've just completed my doctorate, which was an attempt to map the construction of psychopathology in the classroom using participant observation and Foucault. Combining 'conditioning the possible' with Hacking's looping effects provided a very robust theoretical framework. There's a paper in Ethnography & Education this month which uses some of Jenny Gore's observational work to develop a methodological framework for the production of others:

Besides Gore, there are other useful 'visual' refs in there - Shaun Fielding's work on children's geographies, Linda Graham on enunciating and objectifying otherness, Laurence & McCallum on conduct...
Hope that helps
